5 Quick and Easy Dinner Recipes
1. Sheet Pan Chicken Fajitas
Ingredients:
- 1 lb chicken breast, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tbsp fajita seasoning
- 2 tbsp olive oil
- Tortillas, for serving
Instructions:
- Preheat oven to 400°F (200°C).
- Combine chicken, bell peppers, onion, fajita seasoning, and olive oil on a sheet pan.
- Toss to coat everything evenly.
- Bake for 20-25 minutes or until chicken is cooked through.
- Serve with warm tortillas.
2. One-Pot Spaghetti Carbonara
Ingredients:
- 8 oz spaghetti
- 4 strips bacon, chopped
- 2 eggs
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions:
- Cook spaghetti according to package instructions.
- In a skillet, cook bacon until crispy.
- In a bowl, whisk together eggs, Parmesan cheese, salt, and pepper.
- Drain spaghetti and add to the skillet with bacon.
- Remove skillet from heat and quickly stir in the egg mixture.
- Serve immediately.
3. Veggie Stir-Fry with Tofu
Ingredients:
- 1 block firm tofu, cubed
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp minced garlic
Instructions:
- Heat sesame oil in a pan over medium heat.
- Add tofu and cook until golden brown.
- Add mixed vegetables and garlic to the pan.
- Drizzle soy sauce over the vegetables and tofu.
- Stir-fry until vegetables are tender.
4. BBQ Chicken Quesadillas
Ingredients:
- 1 cup cooked shredded chicken
- 1/2 cup BBQ sauce
- 1/2 cup shredded cheddar cheese
- 4 flour tortillas
- 1/4 cup chopped cilantro
Instructions:
- In a bowl, mix shredded chicken with BBQ sauce.
- Divide chicken mixture and cheese evenly on half of each tortilla.
- Sprinkle cilantro on top and fold tortillas in half.
- Cook in a skillet over medium heat until golden brown on both sides.
- Serve with additional BBQ sauce for dipping.
5. Garlic Lemon Shrimp Pasta
Ingredients:
- 8 oz pasta of choice
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Cook pasta according to package instructions.
- Heat olive oil in a skillet over medium heat.
- Add shrimp and garlic, cook until shrimp is pink.
- Add lemon zest, juice, salt, and pepper.
- Toss in cooked pasta and serve hot.
