5 Quick and Easy Dinner Recipes

1. Sheet Pan Chicken Fajitas

Ingredients:

  • 1 lb chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • Tortillas, for serving

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Combine chicken, bell peppers, onion, fajita seasoning, and olive oil on a sheet pan.
  3. Toss to coat everything evenly.
  4. Bake for 20-25 minutes or until chicken is cooked through.
  5. Serve with warm tortillas.

2. One-Pot Spaghetti Carbonara

Ingredients:

  • 8 oz spaghetti
  • 4 strips bacon, chopped
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Cook spaghetti according to package instructions.
  2. In a skillet, cook bacon until crispy.
  3. In a bowl, whisk together eggs, Parmesan cheese, salt, and pepper.
  4. Drain spaghetti and add to the skillet with bacon.
  5. Remove skillet from heat and quickly stir in the egg mixture.
  6. Serve immediately.

3. Veggie Stir-Fry with Tofu

Ingredients:

  • 1 block firm tofu, cubed
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp minced garlic

Instructions:

  1. Heat sesame oil in a pan over medium heat.
  2. Add tofu and cook until golden brown.
  3. Add mixed vegetables and garlic to the pan.
  4. Drizzle soy sauce over the vegetables and tofu.
  5. Stir-fry until vegetables are tender.

4. BBQ Chicken Quesadillas

Ingredients:

  • 1 cup cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1/2 cup shredded cheddar cheese
  • 4 flour tortillas
  • 1/4 cup chopped cilantro

Instructions:

  1. In a bowl, mix shredded chicken with BBQ sauce.
  2. Divide chicken mixture and cheese evenly on half of each tortilla.
  3. Sprinkle cilantro on top and fold tortillas in half.
  4. Cook in a skillet over medium heat until golden brown on both sides.
  5. Serve with additional BBQ sauce for dipping.

5. Garlic Lemon Shrimp Pasta

Ingredients:

  • 8 oz pasta of choice
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Cook pasta according to package instructions.
  2. Heat olive oil in a skillet over medium heat.
  3. Add shrimp and garlic, cook until shrimp is pink.
  4. Add lemon zest, juice, salt, and pepper.
  5. Toss in cooked pasta and serve hot.
